EVO OIL AND BALSAMIC VINEGAR

The El Pendola Farm also produces extra-virgin olive oil and balsamic vinegar.

The EVO oil is obtained from olives harvested by hand from the olive groves cultivated in Valpolicella. The extraction is cold. The oil obtained has a soft and delicate flavour.

Balsamic vinegar is obtained from the must of the grapes of our company. Oxidation takes place in small oak barrels. The vinegar has a rich and full-bodied taste, making it an ideal condiment for many dishes.

COLD EXTRACTION

Produced from olives harvested by hand with facilitators in our olive groves in Valpolicella between October and November. Cold extraction with continuous three-phase system.

SOFT TASTE

Yellow colour with a slight shade of green. Soft and delicate flavour, to combine with everyday dishes like salads, dips, meat, fish and cheeses

YOUNG BALSAMIC

Young balsamic, produced from the must of our grapes harvested between September and October. Obtained by oxidation in small oak barrels.

RICH TASTE

The flavour, rich and full-bodied, with a well-defined sweet-sour balance, has light notes of cooked plum. Daily dressing, ideal with salads, dips, cooking with meat and fish.
