RED WINES FROM THE EL PENDOLA WINERY

Our winery carries on the tradition of good wine in the heart of the classic Valpolicella region. The history of our company began in the early twentieth century. With an awareness of our past, we look to the future, always respecting traditional winemaking procedures, handed down from father to son for five generations.

Our farm continues to use the ancient methods of growing vines.

Our grapes are harvested by hand and the drying is done naturally in the drying room.

VINIFICATION

The vinification is slow fermentation. Expert work, with techniques handed down for generations.

GRAPES

Mainly produced with Corvina, Corvinone, Rondinella and other varieties grown in our vineyards in the municipality of Fumane.

VINIFICATION

Hand harvesting of the grapes. Soft pressing, maceration and fermentation at a controlled temperature.

TASTING NOTES

Intense ruby red colour with violet reflections. Vinous, delicate and fruity bouquet. Dry, harmonious flavour which recalls small red fruits.

GASTRONOMY

Classic red, ideal with pasta dishes, cold cuts, meats and soft cheeses.

GRAPES

Mainly produced with Corvina, Corvinone, Rondinella and other varieties grown in our vineyards in the municipality of Fumane, selected after careful thinning, if necessary, during the summer.

VINIFICATION

Superior classic Valpolicella produced with the traditional "Ripasso" technique. The wine rests until the Amarone is drawn off and then refermented on its still-soaked pomace. Maturation in barrique and tonneau and subsequent refinement in the bottle.

TASTING NOTES

Intense ruby red colour with garnet reflections. Delicate, ethereal scent, with hints of jam. Dry, harmonious flavour.

GASTRONOMY

Ideal with pasta dishes, cold cuts, meats, game and cheeses. Particularly suitable to accompany autumn risottos and pasta and beans.

GRAPES

Red grapes of the region, grown in our vineyards in the municipality of Fumane, from a late harvest.

VINIFICATION

Slightly withered grapes pressing. Fermentation and prolonged maceration on the marc. Wooden passage.

TASTING NOTES

Intense ruby red colour. Spicy and ethereal notes on the nose. Velvety, soft, full-bodied and persistent taste.

GASTRONOMY

Great red wine ideal for red meats, game and aged cheeses.

Corvina, Corvinone, Rondinella, Molinara and other varieties grown in our vineyards in the municipality of Fumane.

VINIFICATION

Soft pressing of the grapes dried during the winter. Fermentation at a controlled temperature and long maceration.
